It is a small yeast-based cake, light and airy, traditionally soaked in rum syrup and often served with whipped cream or pastry cream. The soaking process gives the cake its signature moistness and rich flavor, balancing sweetness with the warmth of the alcohol.

The version I had at Ritz Paris, soaked in Jasmine tea, is an elegant twist on the classic. This infusion likely introduced floral, slightly sweet, and delicate notes, creating a more refined and aromatic experience compared to the traditional rum version. High-end pastry chefs often experiment with different infusions—such as citrus, spiced syrups, or floral teas—to elevate the traditional baba.
